Soft-centred Chocolate Puddings

What gives us greater satisfaction than a chocolate dessert? Very few things indeed! When somebody says they don’t like chocolate dessert, they are looked at as though are foreign and missing out on something of vital importance. Hot chocolate puddings look good, they taste good, they’re comforting and they can be made even more enticing if we fragrance them with spices.
Ingredients

125g whole egg
(where one whole egg weighs 50 grams,
of which 30 grams are egg white and 20 grams are yolk)
75g sugar
75g egg yolks
125g butter
125g melted dark chocolate
30g fine white flour (sieved) or starch (cornflour or potato starch)

Beat the eggs with the sugar and egg yolks until you have a smooth, velvety consistency. Add the butter and melted chocolate and when all the ingredients are well incorporated add the flour. Grease and flour some steel moulds and pour the mixture into them, filling them 3/4 full (you can also use disposable aluminium moulds). Bake in an oven preheated to 220°C for 10 minutes. Turn the puddings out and leave them to rest for a minute then arrange them upside-down on a plate and serve with crème anglaise, a fruit coulis or a chilli and ginger sauce.
