Description
The raw ingredients used to produce Essenza are the same as those used in traditional P.O.D (Protected Designation of Origin) balsamic vinegar of Reggio Emilia. Cooked must is “intercepted” from the long ageing process while maturation is in full swing, creating a concentration of intense, full-bodied flavours. Special small oak barrels are used to create a greater density, rounding off the lingering acidity.
