San Giacomo mature balsamic vinegar is a condiment that can be used every day. It is made using exactly the same ingredients as traditional P.O.D (Protected Designation of Origin) balsamic vinegar, which is acidified in large barrels and then matured in medium-sized barrels to create the desired balance. Using a maturing product was a common and well-established practice in the past. A well-balanced harmony of bitter and sweet flavours. This is a classic balsamic vinegar for raw or grilled vegetables, fresh cheeses and goats cheese as well as frittatas, risottos and shellfish.
