The Essenza is an Exquisite Balsamic made with cooked grape must aged on the second floor of the barn of the acetaia in small wood ballers. This is to take the advantage of the summer heat to concentrate and improve the parfume and aroma. Rich and syrupy with a dominant sweetness. Perfect with creamy desserts, medium-aged cheeses and red meats.

Description

The raw ingredients used to produce Essenza are the same as those used in traditional P.O.D (Protected Designation of Origin) balsamic vinegar of Reggio Emilia. Cooked must is “intercepted” from the long ageing process while maturation is in full swing, creating a concentration of intense, full-bodied flavours. Special small oak barrels are used to create a greater density, rounding off the lingering acidity.
