Only those who take on the challenge of making this feast dish typical of Reggio Emilia will understand how much care, how much passion and how much time it takes to hand-make these exquisite little gastronomic masterpieces.  According to tradition, cappelletti resemble Venus’s navel. They are made with egg pasta and filled with various cooked meats, Parmigiano Reggiano cheese, breadcrumbs and butter. Cappelletti are wonderful served in a capon or beef broth or dressed with cream.

Ingredients used in our cappelletti:

Fine wheat flour, durum wheat flour, pasteurized eggs (26% of the pasta, 10% of the total product), salt. Ingredients in the filling: pork, Vacche Rosse, (“Red Cow”) beef, (60% of the filling, 25% of the total product), Vacche Rosse Parmigiano Reggiano cheese, breadcrumbs, Vacche Rosse butter, lard, salt, spices, natural flavouring. Contains celery.
