Plum Jam Tart

The home-made dessert par excellence. The aroma, the fragrance of the melt-in-the-mouth pastry and the bitter-sweet flavour of the plum jam go to the heart of those who love simplicity, tradition and timeless quality.

Ingredients
200g flour
80g butter
110g sugar
1 teaspoon cake yeast
1 egg
1 egg yolk
A pinch of salt
250g plum jam

Leave the butter to soften. Mix the flour and sugar and place on a wooden board, create a well in the centre for the butter (cut into pieces), the whole egg and the egg yolk, a pinch of salt and the spoonful of yeast. Work the ingredients quickly to create a smooth dough then wrap the pastry in cling film and leave to rest in the fridge for about one hour. Remove the cling film and put aside a small portion of the pastry for the topping. Pull the rest of the pastry thin and lay it in a greased cake tin, making sure you cover the edges of the tin. Spread the jam on the pastry and place strips made from the remaining pastry on top. Cook in an oven preheated to 180°C for about 30 – 40 minutes.
